Donna and I have dedicated yet another winter in our never-ending quest to find new and exciting products for our wonderful friends and customers! Cruising the Caribbean and attending cooking classes in Mexico is a tough job but brings us back fully rested and inspired! The spring season is almost here and our calendar is filling up. We'll be introducing our newest products, Spicy Maple Bourbon Pickles, Hot Mango, Pineapple Pickles and Thai Chili Sauce at the North Hardin Springfest on March 24 followed by a brand new event taking place at one of our favorite locations in Grand Rivers Kentucky at the Grand Rivers Spring Quilt and Craft Festival in mid April.

Strawberry Fields Forever

Donna and I definitely enjoy traveling every chance we get and just returned from the Caribbean ready to knuckle down and do some jammin'! That's me on the left, our new Caribbean friend, and Donna on the right.
Strawberries are everywhere! We were in New Orleans just in time for the Ponchatoula Strawberry festival. We would have loved to bring home bushels of those lovely ripe berries but we knew they wouldn't survive the trip. No problem, we got back to Kentucky and it's strawberry season! After a couple days of unpacking and regrouping, we got down to business. Donna has been working on Strawberry Rhubarb jam and Strawberry Margarita and I've canned Sizzling Strawberry Pepper Jam!
We've gotten our gardens plowed and ready to plant with more than 30 varieties of hot peppers, pickling cucumbers, green beans, and loads of tomatoes. The raspberry, blackberry, and blueberry plants are blooming like crazy and promising a delicious haul for the season.

Nothing like a trip to New Orleans to bring out the creativity for Donna and I. The bartender served me a Bloody Mary with a spicy pickle and a couple of green beans as a garnish. Voila! Why not have both in the same jar? Why not even throw in some okra and make it a Cajun Party? Hence, our newest addition, Cajun Critters! Spicy sour pickles, okra, and green beans together with jalapenos, red pepper flakes and a wicked little red arbol pepper thrown in for good measure!
Our spring festivals will be happening soon and we're working hard to get ready. The inventory is full and we're raring to go! Two events on the same weekend will be coming up in a couple of weeks. Hard to comprehend that it's 20 degrees outside and Christmas is just ten days away! Donna and I just got back from a family cruise and were enjoying balmy breezes and mucho nachos in Belize last week! As always, we were on the lookout for new recipes and found that Belize has it's own unique salsa. We took a break with the family and ordered a mucho nacho appetizer that promised to feed six. There were seven of us on the cruise but we figured a serving for six would be enough since we were going to head back to the ship and continue stuffing ourselves with the endless food that's such a big part of cruising. Imagine our surprise when the nachos arrived and could easily have served twenty hungry appetites! The picture shown to the left is what was leftover after we had all consumed our fill! The salsa was a unique blend of cucumbers, onions, jalapenos, cilantro and lime and is sure to be developed and added to Donna's yummy selection of salsas.
We returned to find that many, many orders had come in during our vacation and immediately set to work cooking, canning, and filling orders. Our jams, salsas, pickles, relishes, and pepper jellies make delightful gourmet treats and stocking stuffers. After a long week in the kitchen, we now have back orders filled and shipped and have the shelves restocked. Donna and I will be hitting the road the next few weekends. We'll be setting up shop at the Flea Off Market in Louisville at 1007 E Jefferson Street this Friday through Sunday.
The following weekend, May 20th and 21st you can find us at the Old Louisville Springfest on historic 1st Street in Old Louisville.
May 28th, we'll be handing out samples and selling our goodies for the Fleur de Flea Vintage Market at Waterfront Park in Louisville and May 29th, we'll be hanging out at the Boomtown Festival in downtown New Albany, Indiana.
These are some great festivals and events promising fun for all! We hope to see you there!

Peach Pecan with Amaretto!
Talk about the perfect combination! Our newest product is a delicious blend of sweet tree-ripened peaches, plump golden raisins, orange zest, Georgia pecans and a generous shot of Amaretto. Delicious as a jam but this one doubles as a dessert sauce. It turns ordinary ice cream or pound cake into a Heavenly dessert!
We love all our products and we recently stumbled across a couple of articles in Genuine Kentucky Magazine written by Joi Sigers professing her love of our pepper jams! She picked up some Cherry Bomb and the review blew us away! Take a look at her review of Tiki Torch, a pineapple pepper jelly. Genuine Kentucky features articles on the best of Kentucky, whether it be food, state parks, or festivals and events. There's always something new to see or do in Kentucky! Hope we see you soon!

Donna and I are home again and have gotten to work! We found lots of inspiration down in the Caribbean and have taken our ideas from the abstract to reality. First on the list, a sizzling hot new pepper jam we've named Twisted Sister. Loaded with Carolina Reapers, Red Savinas, and blistering hot Brain Strain peppers, this one will knock your socks off! I saw a jar of Habanero Jam down in Belize and it occurred to me that with all our pepper jams, we don't have a basic habanero jam to serve with cream cheese or spread over fish or poultry. We do now! This stuff is great over toast or biscuits but a spoonful over hot chicken or fish melts over the top and provides a huge taste sensation!
We've also come up with a delicious Amaretto Peach Pecan jam that will brighten up those spring mornings like a ray of sunshine!
Of course, it's always a good time to stock up on customer favorites like Holiday Jalapenos, Cowboy Candy, Habanero Gold and Habanero Gold Extra Hot! Apple Rum Raisin was a huge hit at the Flea Off in March and we sold out. Not to worry! There's a brand new batch waiting to be labeled!
We've still got a month or so before festivals and events come into full swing so we'll keep stocking up and taking orders from the website and our friends on Facebook. Next event on the horizon is the May Flea Off the week after derby followed the next week by the Old Louisville Spring-fest and the Fleur de Flea Vintage Urban Market on May 28th. Hang in there! Spring will be here before you know it. Donna and I are both heading down to Florida and the Caribbean to get the freshest produce we can and stock up on luscious tropical liqueurs and the best rum we can find. You don't need to worry about the quality, we'll be glad to taste test!

Donna and I wanted to do something special for the Holiday Bazaar at Fort Knox this weekend. Hence: the inspiration for our two newest pepper jams!
Goldfinger is the best pure pepper jam we've ever tasted! We've spared no expense with this one! It's chock full of exotic yellow ghost peppers, citrusy lemon peppers, sweet yellow peppers and rare white habaneros. The result is a luscious jam with lots of lingering heat that chili-heads will love.
Patton’s Poison throws everything into the pot! Red Savina Peppers, 7-Pot Douglah Brain Strain Peppers, Trinidad Moruga Scorpions, Trinidad Butch T Peppers, White Habaneros, Ghost Peppers, and a couple of Carolina Reapers thrown in for good measure with a tangy sweetness that lingers after the bite. The Holidays are approaching! Donna and I have just finished up a hectic two months of outdoor fall festivals and are gearing up for the Holiday Bazaars and Festivals. We're taking advantage of seasonal fruits and veggies and filling holiday orders as fast as we can. Always popular stocking stuffers are Dr. Pepper Jelly, Mountain Dew Jelly, and Big Red Jelly but we're keeping our gourmet offerings in mind, too!
We just finished some fabulous Spiced Apple Preserves, Cranberry Apple Pecan Conserve and some of the sweetest Pear Preserves we've every produced! Needless to say, we're also stocking up on festive Holiday Jalapenos, Gingerbread Jam, and Orange Marmalade with Vanilla Bean and Cointreau. Of course, it's hard to beat good old-fashioned Blackberry Jam slathered on a warm biscuit on these chilly mornings.
We've got all kinds of goodies to garnish the holiday table! Old-fashioned pickles made with pickling lime produce the crunchiest pickle we've even seen. We have them in Kosher Dill, Bread and Butter, Spicy Sour with Jalapeno and Bread and Butter. Relish trays are irresistible with our spicy roasted sweet peppers and Chow Chow and these goodies turn a left-over turkey sandwich into something truly special.

Pickles, pickles, pickles! Donna and I have been making pickles like crazy this fall! We had a bumper crop of Paris Pickling Cucumbers and the results have been fantastic! Our sweet bread and butter pickles were a hit and were quickly followed by Spicy Sour Pickles with Jalapeno and Kosher Dills with onion and garlic.
Patty, always looking for something new, decided to try using old fashioned recipes that include a 24 hour soak in pickling lime followed by another 24 hours of soaking in ice water and vinegar. The results were phenomenal! Pickles so crisp they snap like fresh green beans! We continually sell out at every festival and event we attend.
Don't miss out! Once the frost hits, these feisty goodies will be gone for the year!
As always, we use only the freshest produce available. Currently, we're featuring a fabulous traditional Pear Jam that's sweet as nectar and making it as fast as we can gather pears. Apples are in season and we're stocking up on Old-Fashioned Apple Butter and Donna's unique Maple Bourbon Apple Butter as well as our best-selling Apple Rum Raisin Jam!
Now's the time to order for Christmas! Nothing warms up those chilly winter mornings like one of our jams spread on biscuits warm from the oven!

The very best jams, jellies, pickles, and salsas start with the freshest ingredients! We've been tilling and weeding and planting our berries and veggies and can't wait to start preserving the bounty! Donna and I have selected our favorite varieties of pickling cucumbers, tomatoes, tomatillos, hot peppers, and vegetables and eagerly await results with new and exciting recipes sure to delight our customers.
A winter cruise found us partaking of a full day's excursion in Cozumel to learn how to make the best authentic salsas and Donna can't wait to start producing delicious fruit salsas, salsa verde, and chunky traditional salsa. I, on the other hand, attended the session but focused more on creating and taste testing the best, authentic margaritas. In my defense, however, I did spend the winter searching for and preparing the best varieties of pickles and relishes to be found anywhere. What's a great Chicago Beef sandwich without a great Jardiniere relish to top it off? Grilled hot dogs become gourmet treats with the addition of sweet, spicy Chow Chow and what cookout is complete without a relish tray loaded with a tantalizing selection of pickled green beans, bread and butter pickles or hot and spicy dills?

Donna and I have been busy, busy, busy with the Holiday Season approaching! We've participated in lots of local events including Fall Festivals and Holiday Bazaars. We've also been busy in the kitchen preparing new items that are sure to spice up mealtimes and brighten up chilly mornings!
A bumper crop of Paris Pickling cucumbers led us to produce many customer favorites including Kosher Dill Pickles, Bread and Butter Pickles, Spicy Sour Pickles, Chow Chow and Piccalilli Relish. Be sure to pick up a couple of jars while they're available. Once they're gone, we won't be producing any more until next year's crop comes in.
Our newest pepper jam, Ruby Slipper is a sure-fire winner! Fresh, tart raspberries and jalapenos combine to create a pepper jam with just enough heat to generate lots of compliments and requests for more. Serve with cream cheese and crackers for a holiday appetizer or just serve with toast or biscuits. Ruby Slipper has been getting lots of raves at our sampling shows!

Summer is in full swing and we've been cannin' and jammin' as fast as we can harvest goodies in the garden! More than 50 exotic hot pepper plants are producing like crazy and have led to the addition of two new pepper jams to our line of hot and spicy Pepper Jellies; Sizzling Georgia Peach Jam and Cherry Bomb!
We're keeping a close eye on the world's newest and hottest pepper, the Carolina Reaper, rated on the Scoville Scale in excess of 2,000,000 units of sizzling heat! Our plants are weighted down with this wicked little pepper and Patty has already developed a recipe for Grim Reaper Jam, guaranteed to be the hottest jam to be found anywhere! As soon as those little devils are ripe, they're going jammin'!
Speaking of pepper jellies, we love to visit a wonderful store in the French Quarter that has all kinds of pepper jams and jellies, hot sauces, hot spices and wickedly hot condiments. A recent visit found us looking for inspiration and we were surprised to discover that Two Sisters actually has almost twice as many pepper jams as the shop that inspired us to begin making them!

The sisters offered tasting samples of the many varieties they sell.
"Sisters Donna Mattingly and Pat Roederer’s booth was mobbed by visitors who excitedly were sampling their products. The women’s business, known as Two Sisters Jams, Jellies and Preserves, has been in business for the last few months after both women retired. Mattingly lives in Elizabethtown while Roederer resides in Louisville.
The siblings have attended bazaars and festivals in the area and try to buy most of their ingredients locally. They are looking to partner with farmer’s markets, Mattingly said.
The women specialize in rich, nuanced flavors reminiscent of other foods, including caramel apple jams, cranberry mandarin spread and banana nut bread jam.
The women, too, work with some of the hottest peppers on earth to create nuclear concoctions.
“We have very hot and set-your-pants-on-fire hot,” Mattingly said with a smile.
Visitors who sampled the different flavors raved, describing them as excellent."
